Fish Tacos


Guys… I love Mexican food. It’s a ridiculous obsession but it makes me oh so happy. From creamy, zingy guacamole to punchy black bean salsa, to the crunch of crispy tacos – there’s good tastes and good times when it comes to feasting on Mexican goods.

And now Food Network is bringing one of my favourite cuisines to Australian TV with Pati’s Mexican Table airing 12 July to 23 August.

It’s colourful, loud and beautiful – and definitely one to tune in to. With Pati Jinish hosting, we’ll be transported into the culturally vibrant cities of Mexico and then her own kitchen as she uses traditional ingredients with contemporary new techniques.

I know there’s going to be some awesome recipes showcased, and I’m excited to add them to my own repertoire. After all, it’s a pretty common occurrence in our household to have Mexican feasts adorning our dining table.

Here’s some of my go to items I like to include:

One of the best presents you can get is a functional kitchen accessory. Last year for Christmas my mum gave me a tortilla press – and it blew my mind. Part water, part masa harina and a pinch of salt – and you have yourself a simple but oh so tasty tortilla to accompany your meal.

Guacamole

Avocado, coriander, tomato, onion, salt, pepper and a hell of a lot of lime. This is the good stuff in life – and I will happily eat this with every meal for the rest of my days. I am a guacamole fiend.

Mexican corn

Fresh corn cobs, mayo, crema, feta, chilli powder, garlic, coriander and lime – elotes be still my beating heart. The slightly charred cobs are always so sweet and juicy, and then the combination of the sauces and cheese give it a creamy decadence that puts a smile on my face. Plus they look amazing on your table!

We love to use the tortillas we make and top them with fried or grilled fish (depending on our mood – and sometimes we cheekily just get the fish from our local fish and chip shop), fresh finely slivered red cabbage AND home quick pickled red cabbage, coriander, guacamole and chipotle mayo. They look wicked, are fun to construct and even more enjoyable to eat. For me, they’re the centrepiece of any Mexican feast… and they are an absolute winner.
